I made these three-ingredient paleo pancakes! Only three ingredients: two eggs, a banana, and 1/4 cup almond flour! Used coconut oil on the griddle. So simple and healthy and delicious. Paired with blueberries and spinach instead of syrup. They turned out thin like crepes. Keeping the size small enough to fit on the spatula makes it easier to flip.
I tripled the recipe and made about 35 small pancakes!
